KETO LEMON PIE 🥧

Ingredients
Pie crust 2 cups almond flour 224g 6 sachet stevia Pinch of salt 1/4 tsp xanthan gum40 grams unsalted butter
1 large egg
1 tbsp cold water
fillings
110 grams plain Greek yogurt 2 large eggs 1 lemon juice 60 grams 1 Lemon zest 1 tsp vanilla extract 1/2 cup almond flour 56g6 sachet stevia
procedure
- preheat oven at 180c
- in a food processor put 2 cups almond flour, 6 sachet of stevia or any sweeteners ,pinch of salt 1q4 tsp Xanthan gum and blend it
- add unsalted butter and egg then add 1 tbsp cold water and blend it well
- transfer the pie dough into a 8 inch pie baking pan and flatten it
- get a fork to poke the pie crust and bake at 180c for 15mins
- in another bowl lets make the fillings put the yogurt,eggs and lemon juice and zest and vanilla extract mix this all ingredients until well combine
- add the almond flour and mix it
- get your pie crust and pour the fillings
- optional for the topping Blanch almonds
- bake at 180c for 25mins
- garnish it with powder sweeteners
- enjoy
