KETO LEMON PIE 🥧

Ingredients

Pie crust 2 cups almond flour 224g 6 sachet stevia Pinch of salt 1/4 tsp xanthan gum 
40 grams unsalted butter 1 large egg 1 tbsp cold water

fillings

110 grams plain Greek yogurt 2 large eggs 1 lemon juice 60 grams 1 Lemon zest 1 tsp vanilla extract 1/2 cup almond flour 56g
6 sachet stevia


procedure

  1. preheat oven at 180c
  2. in a food processor put 2 cups almond flour, 6 sachet of stevia or any sweeteners ,pinch of salt 1q4 tsp Xanthan gum and blend it
  3. add unsalted butter and egg then add 1 tbsp cold water and blend it well
  4. transfer the pie dough into a 8 inch pie baking pan and flatten it
  5. get a fork to poke the pie crust and bake at 180c for 15mins
  6. in another bowl lets make the fillings put the yogurt,eggs and lemon juice and zest and vanilla extract mix this all ingredients until well combine
  7. add the almond flour and mix it
  8. get your pie crust and pour the fillings
  9. optional for the topping Blanch almonds
  10. bake at 180c for 25mins
  11. garnish it with powder sweeteners
  12. enjoy
