KETO CHEESECAKE

I made keto cheesecake for new year's eve..It's absolutely delicious  ❣

Crust
  •  2 cups almond flour ( blanched ) 
  •  1/4 cup unsalted butter ( melted ) 
  •  1 1/2  tbs  monkfruit  sweetener 
  • pinch of salt 

Preparation
  1. In a bowl add the blanched almond flour, unsalted butter, monkfruit sweetener, pinch of salt. Mix until well combined. 
  2.  Tranfer to cheesecake molder, and bake to 180c for 5 to 10 mins. 
  3.  After baking set aside, and let the crust cool down completely.  

Cheesecake mixture 

  1. 600g Philadelphia cream cheese  ( original ) 
  2. 200ml  whipping cream 
  3. 1/2  cup monkfruit sweetener 
  4. 1 tsp xanthan gum ( desolve in water ) 
  5. 1/2 tsp vanilla extract 

Toppings

  • strawberry
  • blueberry 

Preparation
  1. In a large bowl add the room temperature  cream cheese, monkfruit sweetener, vanilla extract and  desolved xanthan gum, Whisk until fluffy and lumps  free, Set   aside.
  2. In a seperate bowl add the chilled whipping cream, wisk until stiff peaks
  3. add into creamcheese mixtures, and fold gently until well combined.
  4. add to creamcheese molder, chill in the coldest part of the fridge for 8 hours or until fully set. 
  5. Once the cheesecake is fully set, remove from the molder gently, and add the fresh strawberry and blueberry topping.
