Lowcarb Moist Chocolate Cake

Recipe by Keisha Carandang 

(really moist, not eggy, almost same as regular cake )

In a bowl, mix the below dry ingredients:

3/4 cup almond flour
3/4 cup cocoa powder
3 tbsp coconut flour
1 tbsp baking powder
3/4 tsp baking soda
3/4 tsp xanthan gum
1/4 tsp salt
10 tbsp lc sweetener
3/4 cup lc brown sweetener

Add:
3 large egg
1 tsp vanilla extract

Mix the below and add to the above:
3/4 cup almond milk
1 1/2 tsp vinegar

Whisk until well combined.

Transfer equally into 2 round cake tins (use baking paper or grease the tins)
Bake at 165c for 45 mins

Chocolate glaze:
3/4 cup nestle cream
1/4 cup lc sugar
1 tbsp butter
1/2 cup cocoa powder
1 tsp vanilla
Pinch of salt

Let cool completely.

Once cake is baked, let it cool over a rack.
Pour the chocolate syrup over the sponge to absorb.
Assemble the 2 layer cake.
I put strawberries in the middle (i forgot to put my home made strawberry jam) and top over the chocolate glaze.
