KETO PESTO BITES

Ingredients

2 cups shredded mozzarella cheese
2 ounces cream cheese
1 1/2 cups almond flour
1/2 tbsp baking powder
1 large egg and 1 egg whites 

For the PESTO

  • 1 tbsp salted butter
  • 1 tbsp minced garlic
  • 1 -2 tbsp pesto

Instructions

1. Preheat the oven to 180c
2.     in a bowl combine the almond flour, and baking powder, stirring well.
3. In a second bowl Melt the shredded mozzarella and cream cheese in a micorwave safe bowl in 30 second increments until completely melted. Stir until smooth
4. Combine the melted cheese with the flour mixture. Stir the dough and work the flour into the cheese as well as you can.
5. Next, add the whole egg and the beaten egg, stir the mixture until a soft dough forms. Then, using your hands knead the dough until you are satisfied that the egg, flour and cheese is all worked in the dough together. Make sure there are no streaks of eggs, you want it to be completely combined.
6. flattened the dough and shape into square it depends how think and big you like it or Separate the dough into two sections, roll into a long thin rope. Use a knife to cut into small 1 inch pieces. (I had 80 small pretzel bites total)
7.bake at 180c for 30mins
8. in small mixing bowl put the butter and garlic microwave for 1min and add the pesto mix until well comibine
        9.prepare the pesto in a bowl and put the bake dough and mix until all the holes are cover with pesto
